The vegetable caponata is a light and tasty side dish to accompany main courses such as chicken, turkey, fish or meat. It is prepared with seasonal vegetables, courgettes, aubergines, peppers and cherry tomatoes. These vegetables are cooked in a pan with oil and fresh spring onion, well browned at the end and flavored with sugar and white wine vinegar which give a sweet and sour flavour.

Steps
Wash all the vegetables well under running water and dry them with kitchen paper.
In a frying pan, heat the oil and add the vegetables.
Sauté for 5 minutes on a high flame.
Add the thinly sliced spring onion and season with salt and pepper.
Lower the heat and continue cooking for 20 minutes.
Add a few tablespoons of water if necessary.At the end, add the sugar and white wine vinegar, leave to flavor for 5 minutes. Remove from heat and add basil chopped with your hands and serve.

Cook’s tips
You can add grated garlic for a more intense flavour.
