Apple and custard cake is a simple cake made up of a soft oil base on which is spread with custard and diced apples, then baked in the oven and sprinkled with powdered sugar. A greedy dessert, excellent for both breakfast and snack.

For the cake

6.3 ounces flour (180 g)
2.8 ounces coconut oil (80 g)
3.5 ounces sugar (100 g)
3 eggs
1 lemon (zest)
1 pinch salt
1 vanilla bean
1 teaspoon baking powder

For custard

8.8 ounces milk (250 g)
2.1 cups sugar (60 g)
2 yolks
1 tablespoon cornstarch (30)

For apples

3 apples
1 lemon
3 tablespoons sugar

For finishing

2 tablespoons almonds (sliced)

Prepare the custard by heating. Whip the sugar with the egg yolks and starch until the mixture is smooth and fluffy. Add the milk a little at a time to the whipping. Stir well to bring up the fire. Let it thicken and, as soon as it is ready, pour the cream into a bowl. Cover with cling film and allow to cool at room temperature. Cut the apples into cubes and put them in a bowl with the lemon juice and sugar.

For the base of the cake, whip the eggs with the sugar, the grated rind of the lemon and the vanilla. Gradually add the oil while continuing to whisk. Combine the sifted flour with the baking powder and pour the mixture into a greased pan of 8.6″.

Spread the cream and sprinkle with diced apples and sliced ​​almonds Bake at 356 ° F (180 ° C) for about 45 minutes. Remove from the oven and allow to cool before sprinkling with icing sugar. Keep in a cool place for 2-3 days.
