8.8 ounces high gluten flour
8.8 ounces flour
2.4 ounces sugar
2.8 ounces sunflower oil
0.88 ounces yeast (brewer’s yeast)
4 eggs
1 lemon (zest)
3.5 ounces water
1 vanilla bean

Steps

Pour the flours into the bowl of the mixer. Dissolve the yeast in a little warm water. Add it to the flours with the remaining water. Combine half of the eggs and half of the sugar. Start the car. As soon as the dough begins to form, add the rest of the eggs and sugar. Add the grated lemon zest and the vanilla seeds and then the oil. Leave to work well for 10 minutes. The dough must be smooth and homogeneous. Stop the machine and cover the bowl with film. Let it rise until doubled in a warm place. Deflate and turn the dough over onto a floured work surface. Shape into 50g balls of dough. Place each ball on a sheet of parchment paper. Arrange on a tray and cover with cling film. Let it rise again until doubled in a warm place. Heat the oil to 170 ° C. Fry a few at a time. Drain on absorbent paper. Fill with piping bag immediately with chocolate cream. Pass in the sugar.
