Orange roasted carrots are the perfect side dish for a quick and easy dinner. Just wash them, peel them, cut them into pieces and mix them in a mixture of orange juice, olive oil, salt and pepper. Carrots are perfect in many dishes, excellent as a simple side dish and are perfect for small snacks. Orange roasted carrots are tender and sweet, plus you can change them using different flavored olive oils and spices! I like to peel my before I cook them or eat them but it’s totally optional. If you leave the skin on the carrots, be sure to wash them very well to remove any dirt or pesticides. Also, unpeeled carrots may be a bit tougher than peeled carrots.

Preparation
Wash the carrots well and peel them with a potato peeler. Cut the carrots into 2-3 pieces and arrange them in a baking dish. Add the oil, salt, pepper and grated orange zest. Also add the garlic and orange juice. Mix everything and cook at 200 ° C for 30 minutes. Turn from time to time. Remove from the oven and serve both hot and lukewarm.
If you like more roasted, continue cooking for another 15 minutes.
Cook’s Tips
Peeling carrots is important to remove any residue, or they can be scraped with a knife.
I recommend using organic and untreated oranges.
To speed up cooking in the oven, you can blanch the carrots in boiling water for 10 minutes or 5 minutes in microwave.
Roasted Carrots are good for about 3-5 days after roasting.
Recipe variations
To make them even tastier, you can make a sauce to add at the end of cooking with orange juice, soy sauce and a little cornstarch to thicken.
