Easy pumpkin pasta sauce

Pumpkin pasta sauce, creamy and delicious, is a perfect dish for a quick and easy dinner. This recipe is made up of a few simple ingredients. When the pasta boils, be sure to cook it “al dente”. It will continue to cook in the saucepan, so you don’t want it to go mushy. Also, leave about ½ cup of the pasta water. The pasta water helps dissolve the sauce and makes it creamier without having to add additional fats such as cream. Add some hot pepper to make it even tastier. Choose the pumpkin you like best from the sweetest to the least sweet, the dish will always be tasty.You can also decide to replace the toasted almonds with other nuts such as walnuts, hazelnuts or pecans.

7 ounces pasta
1 onion
14 ounces pumpkin (peeled)
4 tablespoons olive oil
2 tablespoons almonds
1/2 glass white wine
1/4 cup parmesan cheese

1 Knife
1 Pot
2 Pans


Chop the onion and half parsley, add it to a pan with the oil. Let it dry and cut the pumpkin into cubes. Then add the pumpkin to the onion, after 10 minutes deglaze with the white wine. Season with salt and pepper. Cook for 30 minutes, adding a few tablespoons of water or broth from time to time. Blend the pumpkin until creamy. Cook the pasta in abundant salted water. Toast the almonds and set aside. Drain the pasta directly into the pumpkin cream. Add the ladle of cooking water. Skip for a minute. Remove from the heat, add the Parmesan and serve with the toasted almonds and parsley chopped.
