Creamy shrimps & mushrooms fettuccine

Ingredients

  • 3 tablespoonsbutter
  • 1 spoonolive oil
  • 1onion (chopped )
  • 10 ouncesmushroom (cremini)
  • 10 ouncesshrimps
  • 4 tablespoonsvodka
  • 10 ouncesfettuccine
  • 1 spoonparsley (fresh)
  • 1 cupsour cream
  • salt
  • pepper

Preparation

  1. Start by melting the butter with the olive oil in a large skillet over medium-high heat.

  2. Fry the onion until soft.

  3. Thinly slice the previously cleaned mushrooms with a mandolin. Then add the mushrooms. Cook until soft over high heat.

  4. Add the shrimps and let cook 5 minutes

  5. Add the vodka and let the alcohol evaporate

  6. Add the cream with salt and pepper. Let it thicken for 5 minutes.

  7. Cook the pasta in a large pot of boiling water until quite al dente it will finish cooking in the sauce. Add the pasta, season with the sauce and sprinkle with Parmesan cheese and parsley.

Cook’s Tips

To clean the mushrooms, use a damp paper towel or a dishtowel to remove any dirt one at a time. Cleaning mushrooms with water will make them waterlogged. Mushrooms absorb water like little sponges and they won’t brown well when cooked if they are full of water.

When cooking the mushrooms, cook them in a large pan, without a lid and over high heat so that they do not release liquid and add the salt only at the end of cooking
