Hazelnuts cookies are soft inside and have an intense flavor. Excellent on all occasions, from breakfast to tea time they have a truly irresistible scent. This recipe that I propose today is from my family, exactly from my grandmother, who used to prepare these biscuits together with many others typical of our area in Italy.

Mix the flours with the baking powder. In a bowl, whip the soft butter with the sugar. When the mixture is smooth and fluffy, add the egg and vanilla essence, mix well. Combine the flours and knead by hand. Form a loaf and cover with cling film. Let it rest for at least 30 minutes in the fridge. Shape into balls the size of a walnut. Arrange them in a baking tray lined with parchment paper and mash them a little. Arrange the hazelnut on top of each biscuit. Cook for 15 minutes at 180 ° C. Allow to cool before serving.
