Gnocchi bolognese

Gnocchi Bolognese is a traditional Italian first course, the classic Sunday dish, a true comfort food. It might seem like an elaborate dish if you think about the preparation of both the gnocchi and the ragù. But in this recipe I used ready-made gnocchi, you just need to cook them in boiling salted water for a very short time. Soon I will also show you the recipe for potato gnocchi. Returning to this recipe, I can only tell you that the combination of gnocchi and ragù is superb.

Ingredients

For bolognese sauce

1 pound minced beef meat
1 onion
1 stem celery
1 carrot
1/2 cup bacon
1 cup milk
1 cup red wine
16 ounces tomato pulp (ore 2 tablespoons of tomato paste)
salt
pepper

For gnocchi

2.2 pounds potato gnocchi
1/2 cup parmesan cheese

Steps

For Bolognese sauce

Start by preparing the mirepoix by adding chopped carrots, onion and celery in a food processor and blend until finely chopped. Heat a large saucepan over medium-high heat with the olive oil and add the chopped vegetables with a pinch of salt. Cook for 10 minutes until the vegetables release some water and soften, add the bacon, and then the minced meat and shell the meat with a spatula. When the meat is cooked, about 15 minutes, deglaze with the wine and reduce for 2-3 minutes and add the tomato paste or tomato purée.If you add the tomato paste, add a cup of water. Give a final stir and bring the sauce to a slight boil. When it starts to boil, reduce to a simmer and put a lid on, leaving a small opening. Season with salt and pepper. Simmer the Bolognese sauce for at least 1 hour and longer, if you have time, up to 3 hours, adding water if necessary. 15 minutes before removing from the heat, add the milk. Continue to mix the sauce, making sure that nothing sticks to the bottom.

For gnocchi bolognese

Cook the gnocchi in abundant salted water in according to the directions on the package. Drain the gnocchi and pour it into a large serving dish. Add the sauce and mix. Serve with plenty of grated Parmesan cheese.

They can be stored already cooked for 2 days in the refrigerator. They can be heated in the microwave or for a few minutes in a pan by adding a few tablespoons of water.
