Apple and almonds cake

Apple and almond cake, delicious, soft and moist inside. The dough is made with eggs, flour, sugar, almond flour and fresh cream instead of butter. I flavored it with grated orange peel, to which you can add cinnamon or vanilla.

Ingredients

4 eggs
1/2 cup whip cream
5 tablespoons almond flour
2 cups all purpose (AP) flour
1 cup sugar
1 tablespoon baking powder
1 pinch salt
1 orange zest (grated)
3 apple
1 lemon juice
2 tablespoons almond flakes
1 tablespoon icing sugar

2 Bowls
1 Electric hand mixer

Steps

Peel the apples and cut them into thin slices. Place them in a bowl and sprinkle them with lemon juice. Break the eggs into a bowl and add the sugar, orange zest and salt, beat with an electric mixer or a whisk at maximum speed. Add the cream slowly as soon as the egg and sugar mixture is smooth and frothy. Continue whipping for another 5 minutes at medium speed. Using a hand spatula, combine the sifted flours with the yeast. Add half the apples. Transfer the mixture into a buttered mold 8,66″ ( 22cm) . Decorate the surface of the cake with the remaining apples and flaked almonds. Cook at 356°F(180°C)for approximately 45 minutes. Remove from the oven and let cool. Sprinkle with icing sugar.

Cook’s tips

You can also flavor the apples with cinnamon and let them macerate for a couple of hours.

If you like sweets, add a spoonful of sugar
