Italian apple cake

Italian apple cake is the classic grandmother’s cake perfect for a snack or breakfast. Soft and tasty, it fits the whole family together. A truly simple cake that is made with a few ingredients that we have in the pantry. In addition, this cake can be flavored to your taste, I chose the most classic, lemon and vanilla, but we can replace them with orange and cinnamon or add some liqueur.

Ingredients

3.5 ounces unsalted butter
2.4 ounces sugar
2 eggs
7 ounces all purpose (AP) flour
1 pinch salt
1 vanilla bean
1 lemon (zest and juice)
2 apple
4 tablespoons apricot jam
1 teaspoon baking powder

Steps

Grate the lemon zest, open the vanilla pod to remove the internal seeds with a knife, set aside. Cut the apples into thin slices and drizzle with lemon juice. Whip the butter with the sugar until smooth with an electric mixer. Flavor with the lemon zest and vanilla seeds. Add one egg at a time while continuing to whisk. Combine the sifted flour with the baking powder, mixing by hand with a spatula. Pour the mixture into a previously buttered mold (8 inches). Decorate the surface with apple slices. Bake at 356°F (180°C) in a preheated oven for about 40 minutes. Remove from the oven and polish immediately with the apricot jam. Wait for it to cool before unmolding it.

Cook’s tips

You can also flavor the apples with cinnamon and let them macerate for a couple of hours.
