Wash and dry the vegetables well. Cut them into small cubes. Heat the oil with the poached garlic clove and marjoram. When the oil is hot, add the vegetables and sauté over high heat. Season with salt and pepper. Deglaze with the white wine and let the alcohol evaporate. Remove from the heat, the vegetables must remain crunchy. Cook the pasta in abundant salted water. Drain the pasta directly into the vegetables and sauté for 1 minute with 1 ladle of cooking water. Remove from the heat, add the Parmesan and serve immediately the fresh veggie spaghetti.
Cook’s tips
It’s possible to flavor with thyme or basil instead of marjoram or with all three of the aromatic herbs mentioned.
