Baked salmon

Baked salmon is a complete dish for a quick but tasty dinner. Accompanied by potatoes and broccoli it is a healthy and light meal. Salmon is flavored with garlic, lemon and ginger which make it more delicious. Potatoes can also be substituted for sweet potatoes and any variety of broccoli can be used. Aromatic herbs such as thyme and rosemary can also be added.

Ingredients

  • 2salmon fillets
  • broccoli
  • 10potatoes
  • 2 clovesgarlic

Preparation

  1. Clean the salmon from any scales and rinse it with cold water. Dry it with kitchen paper and place it in a pan. Grate the ginger, lemon zest and garlic in a small bowl. Add the lemon juice and oil. Mix the mixture well with a fork and pour it over the salmon steaks.

    Wash the potatoes well and divide them in half. Put them in a bowl and season with oil, salt and pepper. Arrange the potatoes in the pan with the salmon and add 1 clove of garlic. Cook in the oven at 200 ° C for 20 minutes.

    In the meantime, remove the hard stalk from the broccoli and select the florets with a knife. Wash them in cold water. Heat some water in a saucepan and as soon as it boils add the broccoli. Cook for 10 minutes. Drain the broccoli, season with oil and salt, and add them to the potatoes. Continue cooking in the oven for another 5 minutes and serve your baked salmon.

Cook’s Tips

For faster cooking of potatoes, blanch them for 10 minutes in boiling water before baking.

Aromatic herbs such as thyme and rosemary can also be added.
