Apple tart

The apple tart is a classic of Italian pastry. An excellent dessert in all situations, from breakfast to snack for your children or as a dessert at the end of a meal to be accompanied with a good vanilla ice cream. The apple tart can also be enriched with dried fruit such as almond flakes, chopped walnuts or hazelnuts to sprinkle on the surface before cooking.

Ingredients

2 cups flour
1/2 cup butter
2 yolks
vanilla essence
1 pinch salt
1 lemon (zest)
2 apples
1 pinch cinnamon powder
1 lemon juice
1 cup apricot jam

1 Rolling pin
1 Knife
1 Bowl

Preparation

Arrange the sifted flour on a pastry board, add the butter into small pieces and rub the flour and butter between your hands until it is waterproof.

Add the icing sugar, a pinch of salt, the vanilla essence and the grated lemon zest. Continue to work it with your hands Finally, pour in the egg yolks and knead everything quickly.

Form a loaf, wrap it in plastic wrap and place it in the fridge for at least half an hour before using it.

You can make the shortcrust pastry with a food processor.

Cut the apples into thin slices and sprinkle them with lemon juice. Add a pinch of cinnamon and mix well.

Roll out the shortcrust pastry and line a tart mold. Cover the bottom of the pastry with the jam. Arrange the apples on the tart.

Cook at 170 ° C for about 30 minutes.

Remove from the oven and leave to cool before removing from the mold.

Cook’s Tips

Shortcrust pastry processing is best if it rests overnight in the fridge.

Choose floury apples for a creamier texture.

Recipe variations

You can replace apricot jam with apple compote.

For a more crunchy texture you can add almond flakes or chopped walnuts
