Stuffed courgette slices, breaded and fried

Well friends, today a super tasty recipe, stuffed courgette slices, breaded and fried.
My followers knows that I use to cook with philosophy of using everything that is already in the fridge without the need to go in the grocery.
In this case I had 2 zucchini, some green olives, dried tomatoes and baked ham in the fridge that they needed to be consumed and some stale bread. I can assure that I had a recipe perfect for you and your guests! Try it!!

Ingredients

2 zucchini squash, boiled, no salt, drained
15 olive (green)
3 tomatoes (dried)
3.5 stale bread
1/2 glass milk (to wet the bread)
6 slices baked ham
1.7 emmenthal
q.s. salt
q.s. pepper
2 eggs (for breading)
q.s. breadcrumbs (for breading)
10.5 peanut oil

Steps

Cut the courgettes into rounds not to thin because they will be filled

boil the zucchini for 10 minutes

with a knife cut in the middle the round and put the pulp in another cup

cut the olives and put them in the cup with the zucchini pulp

squeeze very well the zucchini in order to eliminate the water

cut the dried tomatoes and put them with the green olives and zucchini

Add the bread soaked in milk

cut the baked ham

put it in the cup with all the rest

Add also the pieces of emmenthal

now very delicately stuff the rounds

pass them in the flour

then in the eggs

in the breadcrumbs

bread all the courgettes

fry them in plentiful of peanut oil and serve them.
