Friends, today’s recipe is so easy and fast to do that I’m sure that you will do that very often, quick and crumbly lemon biscuits.
This is a recipe that i made it a time ago and now i re-edited it.
I wanted to make it them again because i really love them … And i love shortcrust pastry and i assure to you that this recipe it’s perfect and the result is sure.
I made two little variations: I added 2 peel of grated lemon instead of just 1 and I used the 0 flour instead of 00 flour.
My friends, those biscuits were so good that they lasted from the evening to the morning. If you like recipes with lemon in it you can also try to do the fresh lemon cake without jelly. Try to make it, they are very easy.

in a cup add the soft butter and the sugar
add the grated lemon peel
work the compound until you will have a cream



add the lemon juice
the extract of vanilla
the egg and work it all with a spatula



mix the flour with the baking powder
start to mix the flour
start to work your compound until you will have a smooth and soft dough and let it rest in the fridge for 30 minutes



take some pieces of the dough
pass them in the powdered sugar and place them in the mold covered with the baking tray
cook in a preheated oven at 356 degrees for 10 minutes. Let them cool and serve those delicious lemon biscuits.
