Creamy cake with rice, potatoes and zucchini

Today a really recycling recipe, Creamy cake with rice, potatoes and zucchini. How many times it happens to you to have some leftovers of zucchini or potatoes? For me it happens so many times because, every time I cook them, I’m always afraid that I won’t be enough food for everyone but, in the end, it remains.In this case, I also had some eggs that were near to their expiration date so I had this wonderful idea in order to eat all of this food togheter by making a rice cake. Moreover, I never made or published this recipe on my blog yet. I really suggest you to try it, it is really a save dinner or lunch.

7 ounces zucchini squash (light green), pan grilled, no salt
5 tablespoons cheese (stracchino)

Start by cutting a zucchini in slices.

Do the same thing with potatoes.

Start to cook potatoes with zucchini in a pan with oil and onion.

In the mean time, boil the rice and add to the pan with potatoes and zucchini some water of the boiled rice. Cook for 15 minutes.

Drain the rice, add some oil and let it cool.

Add the potatoes and zucchini that now are cooked.

Let it cool.

Add two spoons of parmigiano cheese into the eggs

Add some salt, some chopped parsley and beat lightly with a whisk.

Add the eggs to the rice that is not warm anymore.

Pour it all in a mold of 22 covered with baking paper.

Add some stracchino cheese.

Finish all by adding some Parmiggiano cheese on the top of it. Cook in a preheated oven at 200 degrees for 25 minutes and the serve your creamy cake with rice, potatoes and zucchini.
