Today I want to share with you a cold and very tasty first course, not the usual rice salad but RICH RICE SALAD WITH BASIL PESTO, ideal to take to the sea or, why not, even on a trip. Put it in airtight containers and keep it in the cooler until lunchtime.Rice salad with pesto is made in a few minutes and with typical summer ingredients, which we can adapt to our needs and tastes.

2 cups rice
10 black olive
10 green olives
6 artichokes in oil
2 tomatoes (red)
6 oz tuna in oil
4 tablespoons extra-virgin olive oil
q.s. salt
7 oz pesto sauce

Steps Rich rice salad with basil pesto

The first thing to do is to boil the rice in plenty of salted water, drain it

Pour it into a salad bowl and season with extra virgin olive oil. Let it cool down

At this point prepare the dressing. Cut the tomato into small pieces

Pour the tomatoes into a bowl and season with extra virgin olive oil, salt and a few basil leaves

Cut the artichokes in half and add them to the tomatoes

Add the pitted green and black olives

the tuna and turn well

Now add the pesto to the cold rice and stir well

Pour all the sauce into the rice, mix everything well, let it cool well in the fridge for 1 hour and our rice-rich salad is ready to be enjoyed.

VARIATIONS

If you don’t want to make the usual rice salad, you can also replace the rice with pasta, draining it halfway through cooking, or a good couscous following the preparation methods
