Today I want to share with you a really tasty that is also really easy to make the RASPBERRY AND AVOCADO PLUMCAKE FROSTED WITH LEMON. This sweet it was realized without butter that I had replaced with avocado and I assure to you that is really good to carry when you will go to your friends house or house of family members in this holidays period. I made this plumcake with chocolate and cocoa, but if you prefer, you can also don’t put it on your plumcake.

Ingredients

250 g flour (00)
30 g bitter cocoa powder
200 g avocado (1 ripe avocado)
200 g sugar
180 g egg (3 eggs)
200 g yogurt, greek, 0% fat, flavored flavored
50 g chocolate-flavour hazelnut spread
1 sachet baking powder

FOR THE FROSTED

250 g sugar (powdered sugar)
60 g lemon juice

TO FILL AND DECORATE IT

100 g raspberry jam
80 g raspberries

STEPS RASPBERRY AND AVOCADO PLUMCAKE GLAZED WITH LEMON

In a big cup add the sugar and the avocado that you have previously smashed with a fork (1). Work all with electric whips until you will have a cream (2). Add the eggs and mix all (3) and now add the hazelnut cream and the greek yogurt (4). At this point in a other cup add the 00 flour, cocoa (5)

and work all with the whip (6) and then add the baking powder (7).
Pour in a greased and floured loaf pan your dough (8) and cook it in a preheated oven at 180 degrees for 45 minutes. Prepare the frosted mixing the lemon juice with the powdered sugar. Mix all until you will have a cream that won’t have to be too soft or too thick (9).

Leave to cool your plumcake, cut in half and fill it with the raspberries marmelade. Put on it the frosted and serve your plumcake once you decorate it with raspberries.
