Salmon meatballs

Salmon meatballs, simple and tasty, can be served both as a main course and as an aperitif. These salmon meatballs are fried, but they can also be baked in the oven, remain soft inside and are wrapped in a crispy breading made with breadcrumbs and almond flour. I accompanied them with slices of fried avocado with the same breading as the meatballs and a yogurt and mustard sauce.

For meatballs

10 ounces salmon fillet
3 tablespoons egg whites
2 slices white bread
1 teaspoon mustard
1 tablespoon parsley
1/2 lemon
salt
pepper

For breading

2 slices white bread
2 tablespoons almond flour

For frying

17 ounces sunflower oil

For yogurt sauce

4.4 ounces yogurt
1 tablespoon lemon juice
2 teaspoons mustard
salt

For fried avocado

1/2 avocado
2 tablespoons egg white

Steps

In the glass of the mixer, blend the bread for the breading and the almond flour until the mixture is homogeneous, and set aside. Mix the yogurt with the mustard, salt and lime juice. Cut the salmon into chunks and put it in the blender with the chopped bread, parsley, egg white, mustard, grated lemon zest, salt and pepper, then blend everything. Form the meatballs and pass them in the breading. Heat the oil to 170 ° C and fry the salmon meatballs. As soon as they are golden, remove them and drain them on a sheet of absorbent paper. Dip the avocado first in the egg white and then in the leftover breading of the meatballs and fry for a couple of minutes. Serve immediately hot with the yogurt and mustard sauce and the fried avocado.

Cook’s tips

Almond flour makes the breading more crunchy and dry.

You can replace almond flour with any other dried fruit flour, pistachios, hazelnuts, cashews.
