Saltimbocca are a Roman speciality and are prepared with veal, prosciutto and sage. A tasty and savoury dish to bring to the table for an informal dinner. It is also very quick to prepare in just 15 minutes.

Beat the meat and salt it on one side only. Dust them with flour and place a slice of ham and a sage leaf on each slice. Stick the slices with a toothpick to hold the whole thing in place. Pour the oil into a frying pan and heat it up. Add the saltimbocca and brown them well. Add the white wine and let the alcohol evaporate. Put a lid on the pan and cook for a further 2 minutes. Serve immediately.
