Beef ossobuco is one of the great classics of Italian cuisine, a dish that embodies the tradition of slow-cooking meat. Made with beef shanks, ossobuco becomes incredibly tender thanks to the long braising and marinating in red wine. It’s a convivial yet refined dish, perfect for Sunday lunches.

For the marinade
Roughly chop the onion, garlic, carrot, and celery; set aside. Place the veal shanks in a baking dish. Cover with the vegetables and spices. Add the red wine and cover with plastic wrap. Let rest in the refrigerator for 12 hours.
For cooking
Remove the ossobuco from the marinade and pat dry with paper towels. Remove the vegetables and set aside. Incise the connective tissue surrounding the meat slices, season with salt and flour. Heat the oil in a pan and add the ossobuco. Brown them well on both sides. Add the vegetables, sauté for a couple of minutes, and add 1/4 cup of the broth. Cover and cook for about 1 hour, or until the meat is tender. Add broth occasionally. Once cooked, remove the ossobuco and blend the cooking juices with a blender. If the liquid is too thin, let it thicken for 10 minutes. Serve the ossobuco piping hot with the cooking juices. Serve with polenta or mashed potatoes.
