Season the slices of chicken breast with salt and pepper. In a large pan add the oil and heat. Arrange the chicken breasts and brown well on both sides, until they have a golden crust. Remove the chicken breasts and add the chopped onion and a grated clove of garlic. Let it cook for 1 minute and add the spinach. Season with salt and pepper. If the spinach is fresh, cook for a couple of minutes, but if it is frozen, let it cook for at least 15 minutes. Add the cream, grated Parmesan, the drained dried tomatoes and mix well. Place the chicken breasts in the sauce, leave to flavor for a few minutes and serve with grated lemon zest.
To make the chicken breast crisp on the outside and soft on the inside, flour the slices before browning them.
If you have a large chicken breast slice them in horizontally to make the thickness even.
If you want to make this recipe lighter, replace half the amount of cream or whole with chicken broth.
You can substitute grated lemon zest with orange zest.
Turkey breast can also be used instead of chicken.
You can also add mushrooms instead of dried tomatoes.
