Today I want to share with you a typical pugliese recipe: MEATBALLS BREAD TOMATO RECIPE. Meatball made with bread are a poor plate that is really easy to make but also very tasty. If you have some stale bread don’t throw it away, try this recipe!
Soften the bread with some milk or water and knead it with eggs and some parmigiano cheese o, if you prefer, with some pecorino cheese.
Those meatballs are very tasty even without the tomato juice, just fried but, if you want my point of view, with tomato juice are even better.

INGREDIENTS MEATBALLS BREAD TOMATO RECIPE

  • 300 gstale bread
  • 1 clovegarlic
  • q.s.water (or milk)
  • 1 bouquetparsley
  • 1egg
  • 40 gparmesan cheese
  • 1 pinchsalt
  • 1 pinchpepper
  • 1/2onion
  • 500 gtomato sauce
  • 4 spoonsextra-virgin olive oil
  • 300 gpeanut oil

PREPARATION MEATBALLS BREAD TOMATO RECIPE

  1. In a casserole fry the onion with extra virgin oil,(1) add the tomato juice and salt and simmer for 30 minutes. (2)

  2. Cut in pieces the stale bread(3) and soften it with some milk or some water in a cup.(4)

  3. When the bread will be soft enough squeeze it and then add salt and pepper. (5)

  4. and then add salt and pepper,(6)the egg, (7) garlic, chopped parsley(8) and, in the end, the parmigiano cheese(9) or, if you prefer, the pecorino cheese.

  5. With your hands knead and mix all. (10)

  6. Form your meatballs(11) and fry them in aboundous peanut oil and leave them from the pan when they will it seems to you golden.(12)

  7. Once all the meatballs will be ready you could put them in the tomato juice and let them cook for a while

  8. Now you can serve it.
