Amaretti cookies

Amaretti cookies are a typical Italian dessert of which we find many versions, each house has one. These delicious almond morsels are crunchy on the outside and just the right softness on the inside. Amaretti cookies are great for entertaining or even gifting this festive season. Amaretti are prepared with almond flour, powdered sugar, egg white and some almond essence, so they are naturally gluten-free and lactose-free.

Ingredients

4 cups almond flour
2 egg whites
1/4 powdered cane sugar
1 teaspoon almond essence

Tools

2 Bowls
1 Baking paper
1 Baking Tray

Steps

Beat the egg whites well with an electric whisk
When the egg white foams, add the almond flavor.
Mix the almond flour and sugar in a separate bowl until the sugar appears to disappear.
Pour the egg white mixture into the almond flour and mix well with a wooden spoon.
With your hands, form a dough. Wrap it in cling film and let it rest for an hour in the fridge.
Line a baking sheet with parchment paper.
In a bowl, add the icing sugar.
With a teaspoon, collect a ball of dough and shape it well in your hands.
Dip the ball in the icing sugar and place it on the baking sheet.
Proceed in the same way until the dough is tempered.
Preheat the oven to 350°F.
Flatten your hand and gently press on each ball making the surface flat.
Sprinkle with another sprinkle of icing sugar before baking for approx. 10 minutes.
Remove from the oven and leave to cool.

It’s important to let the dough rest in the fridge, so the dough becomes firm and the flavors blend.
