Ingredients

  • 2 cupschestnuts (to peel)
  • 4 tablespoonsbitter cocoa powder
  • 1 cupmascarpone
  • 4 tablespoonssugar (brown)
  • 1/2 cupmilk
  • 1vanilla bean
  • 10ladyfingers
  • 1/2 cupcoffee

Preparation

  1. Score the chestnuts and place them in an instant pot with 1 tablespoon of salt and cover with water. Cook for 25 minutes. At the end of the cooking time, wait for the pan to open. Allow the chestnuts to cool a little and peel them, removing both the peel and the thin skin They are better peeled when hot. Chop the chestnuts and put them in a saucepan with the milk, brown sugar and vanilla essence. Cook over very low heat for 15 minutes until the chestnuts become very soft. Remove from heat and set aside to cool, then whisk in a food processor until smooth. If necessary, add another 3-4 tablespoons of milk to obtain a creamy consistency. Add the mascarpone and cocoa. Blend for a few minutes until you get a homogeneous mixture. Dip the ladyfingers in the coffee and place them on the bottom of a 24 cm baking dish Pour over the cream and level well. Sprinkle with cocoa and leave to cool in the fridge for at least 6 hours before serving.

Cook’s Tips

Chestnuts can also be cooked in a pot, extending cooking times up to 1 hour.

Chestnuts are easier to peel when hot.

Recipe variations

For the milk-free version, you can replace mascarpone with silken tofu and milk with soy drink.

For the gluten-free version, gluten-free ladyfingers can be used.
