Today I want to share with you a recipe that I use to do often because I really love it: SWEET POTATOE FILLED WITH PEPPERS, TUNA AND OLIVES.
Sweet potatoes are perfect for every kind of recipe, both sweet and savory recipes.
Sweet potatoes are rich of properties and benefits, lot of vitamins (A, B6, C) and mineral salts… Also they have a really low glycemic index compared to the common potatoes.

INGREDIENTS SWEET POTATOE FILLED WITH PEPPERS, TUNA AND OLIVES

  • 400potatoes (american sweet )
  • 400 gpepper
  • 180 gtuna in oil
  • 300 gtomato pulp
  • 20 gblack olives
  • 1 clovegarlic
  • 30 gextra-virgin olive oil
  • 5 gsalt
  • 20parmesan crust
  • 20 gbread crumbs

PREPARATIONSWEET POTATOE FILLED WITH PEPPERS, TUNA AND OLIVES

  1. Boil the potetoes in aboundous water for 35 minutes(1) and when they will be soft drain the water and then take off the peel.

  2. When the poteatos will be less hot empty them with a spoon. Set the pulp aside(2)

  3. Wash the pepers and then cut them in thin stripes. Take a pan and heat the garlic with the peppers and then add the tomato pulp, tuna, olives and let them cook for 20 minutes(3)

  4. At this point you can pour everything in a cup and add the potatoes pulp, parmesan crust, bread crumbs and salt(4)

  5. Whit a spoon mix everything and then put it in the empty potatoes(5)

  6. Put it on a pyrex dish with the oil and add other parmesan. Now you can cook on a warm oven at 180 ° for 20 minutes and then serve it.
