Separate the yolks from the egg whites and whip the yolks with the sugar, they should be nice and puffy and then add the mascarpone, mix well you can also use whips and electric. Now whip the egg whites until stiff and then add them a little at a time to the yolk and mascarpone mixture mixing gently being careful not to disassemble everything you may not even need all the whipped egg whites consider that the cream should remain nice and velvety the egg whites will melt it a little so adjust yourself. Once the cream is ready, start composing the cake. Dip some of the ladyfingers in the coffee and place them as you go in an oven dish and cover the entire bottom, spread a layer of cream on top and sprinkle with cocoa, now make another layer of ladyfingers and then cover them with the remaining cream and sprinkle with cocoa. Place the tiramisu in the refrigerator until it is time to enjoy it.
