APPLE PLUMCAKE

Apple plumcake the old-fashioned way, a fantastic dessert to say the least, super soft and mouth-watering great for both a sweet breakfast and a tasty snack. In the time of our grandmothers, there were no kneading machines or electric whips so the cakes were mixed vigorously by hand and out came fantastic cakes often rustic looking but soft and yummy like just this plumcake you just have to mix the ingredients together , add some apples and the cake is ready to be baked and enjoyed. 100 g greek yogurt
150 g sheep ricotta cheese
3 apples
2 eggs
60 g suga
100 g 00 flour
9 g flour (whole wheat)
100 g walnuts ((peeled and coarsely chopped))
1 sachet baking powder
2 tablespoons raisins
lemon peel (grated)
cinnamon powder (to taste )
powdered sugar (for dusting)

LET’S START MAKING THIS DELICIOUS SWEET DESSERT WITHOUT ELECTRIC WHIPS

PROCEDURE

As I told you above, this is a very simple and quick dessert to make and without electric whisk. First, soak the raisins and let them soften then peel the apples(I peeled only two and one I used with the whole peel) and cut them and wedges about 1 cm thick(see the picture below), put them in a baking dish with a tablespoon of sugar, a little cinnamon a squeeze of lemon juice and let them soften either in the microwave or as I did in the air fryer or just on the stove but they should not cook just soften. Once soft let them cool. Meanwhile, put all the ingredients in a bowl except the flours and baking powder. Mix well with a hand whisk, sift the flours and add them to the bowl and finally add the baking powder as well. Mix well and then pour everything into the buttered and floured pumcake mold or, as I did , covered with baking paper. Level it out well and then wedge all the apple slices on top, gently crush all the dough with your hands this way, the apples will sink a little bit(see the photo below). Bake in the hot oven, at 180 degrees, for about 35 to 40 minutes but always adjust with your oven and do the toothpick test before baking. Take the cake out of the oven and dust it with powdered sugar.
