Potato croquettes with Mozzarella, super greedy and easy: everyone in my family likes them. Classic finger food, excellent as an appetizer for a buffet or as a side dish. My mom used to make them for me when I was a child and I was crazy about them. But to be honest, I still love them now. It’s definitely one of my favorite comfort foods. They are delicious both hot and cold.

Ingredients

2.20 pounds potatoes (1 kg)
1 egg
1/2 cup parmesan cheese (grated – 1,7oz 50g)
1/2 cup mozzarella (4,40 oz 125g)
q.s. salt
q.s. flour (for the croquettes before cooking)
q.s. olive oil (or vegetable oil – for frying)

Steps

Potato croquettes with Mozzarella recipe is easy to prepare.

First of all, wash the potatoes using a vegetable brush, scrub each potato under lukewarm running water. Put them in a large sauce pan and cover with lightly salty cold water.

Bring to boil and let them cook for about 25 – 30 minutes (when the water begins to boil).

Cooking time will vary depending on how many potatoes and size of pieces.

If you use a pressure cooker, consider 12 minutes from the moment it starts whistling.

Once cooked, peel them, pass them in a potato masher and place them in a bowl to cool.

Add grated Parmesan and salt, then the egg and beat with a fork; mix well.

Pour the flour in a dish. Drain the mozzarella and cut into small cubes.

Take a handful of potato dough, insert a cube of mozzarella in the center and wrap it well. Repeat until you have used up all the dough. You should obtain about 20 croquettes.

Roll in the flour and fry them immediately in a large frying pan with plenty of oil, turning regularly until golden brown.

N.B.: once floured, fry them immediately, otherwise croquettes become soft and you can no longer manage them.

Once ready, pat them with kitchen paper and serve hot.
