Ingredients

12.70 ounces pasta (360 g rigatoni, penne or other short pasta)
1 onion (small or a shallot)
5.30 ounces bacon (cubed 150g)
2/3 cup heavy cream (5,30oz 150g)
1 cup peeled tomatoes
1 clove garlic
q.s. parsley
3 tablespoons extra-virgin olive oil
4 tablespoons parmesan cheese (or pecorino)
q.s. salt (to taste)

Steps

Pasta with Bacon Tomato and Cream recipe is really easy to make.

Put on a large pot of water to boil for the pasta. Once it starts to boil, add salt and cook the pasta al dente according to the instructions on the package.

Make the sauce

Meanwhile, peel and finely chop the onion (or the shallot).

Heat the olive oil in a large pan and sauté gently the onion and a clove of garlic until they start to soften.

Then, remove garlic and add diced bacon: sauté until fat becomes transparent.

Now, add peeled tomatoes and mash them lightly with a fork. Cover with a lid and cook. You will need to get a thick sauce, not too liquid.

Add heavy cream and reduce it, stirring, for a few minutes.

Finish and serve

Once pasta is al dente drain it and keep some cooking water aside. Add the pasta to the sauce along with a ladle of cooking water (if needed). Mix well and let it go for a few minutes to complete the cooking.

Finally sprinkle with grated Parmesan and chopped parsley. Serve hot.

You can store Pasta with Bacon Tomato and Cream in the refrigerator for 1-2 days, closed in an airtight container.

Tips & tricks

For an even tastier and richer version, add diced smoked (or sweet) scamorza cheese cut into cubes. Add it to the pasta in the pan at the end of the preparation, with the heat off. Mix and serve with grated Parmesan and chopped parsley.

Instead of peeled tomatoes, you can also use fresh cherry tomatoes.
