Steps
1) Preparing the Rice
First, cook the rice: place the rice in a small pot, cover it with cold water, and bring it to a boil. Once boiling, cook for about 10 minutes, then turn off the heat. Be sure to check the package instructions as cooking times may vary depending on the brand.
Once cooked, drain the rice in a colander and quickly rinse it under cold running water for just a moment to stop the cooking process. Set it aside to drain completely.
2) Boiling the Eggs
While the rice is cooking, prepare the hard-boiled eggs: place the eggs in a small saucepan, cover it with cold water, and bring it to a boil. Once boiling, cook for about 9 to 10 minutes.
Once done, transfer the egg to a bowl of ice water (or run it under cold water) to cool. Carefully peel it, dice or slice it, and set it aside.
3) Preparing the Veggies
Now, it’s time to cook the peas. Bring a small pot of water to a boil and add the peas. Meanwhile, slice the carrot into strips and then dice it into small cubes.
When the peas have about two minutes left to cook, toss in the diced carrots just to blanch them for a moment. Personally, I like the carrots to be slightly cooked, but if you prefer a fresh crunch, feel free to leave them completely raw!

4) Bringing It All Together
Slice the olives into small rings, chop the drained roasted red pepper, and mix the tuna with the mayonnaise in a small bowl.
Now, you are ready to assemble the rice salad! Combine all of your prepared ingredients in a large mixing bowl. Finally, drizzle with extra virgin olive oil and season with salt to taste. Give everything a gentle toss to combine, and you’re done.
Here is your Colorful Summer Rice Salad, ready to enjoy.

Buon appetito!

Storage
You can store the Colorful Summer Rice Salad in the refrigerator for about 2 to 3 days, kept in an airtight container or covered with plastic wrap.
Tips for the Perfect Insalata di Riso
– Choose the Right Rice: For the best texture, use a parboiled long-grain rice, Carnaroli, or even Jasmine rice. You want a grain that holds its shape and stays firm and separate. Avoid starchy rices like Arborio (unless parboiled), which can make the salad sticky.
– The “Shock” Method: Rinsing the rice under cold water isn’t just about cooling it down; it stops the cooking process instantly and washes away excess starch, ensuring your grains don’t clump together.
– Let it Rest: While you can eat this immediately, letting it chill in the refrigerator for at least 1 to 2 hours before serving allows the flavors to beautifully meld together. If it feels a little dry after chilling, simply toss in a tiny drizzle of extra virgin olive oil before serving.
– Dice Consistently: Try to cut your cheese, ham, and carrots into small, even cubes roughly the size of your peas and corn. This ensures you get a perfect mix of colors, textures, and flavors in every single bite!
Creative Variations to Try
One of the best things about this recipe is how incredibly customizable it is. Here are a few delicious ways to put your own spin on it:
– The Seafood Twist: Swap the ham and cheese for extra tuna, and add some drained canned crabmeat, small steamed shrimp, or a handful of pickled capers for a bright, Mediterranean seafood vibe.
– The Vegetarian Version: Omit the ham and tuna entirely. Instead, load up on extra veggies like diced cucumbers, cherry tomatoes, and black olives. You can also toss in some canned chickpeas or white cannellini beans for a boost of plant-based protein.
– A Lighter Mayo-Free Dressing: If you aren’t a fan of mayonnaise, swap the tuna-mayo mixture for a vibrant, classic Italian vinaigrette. Just whisk together 3 tablespoons of extra virgin olive oil, 1 tablespoon of fresh lemon juice or red wine vinegar, a pinch of dried oregano, salt, and freshly cracked black pepper.
– The Cheese Swap: While mild cheeses like Asiago or Emmental are traditional, you can use cubed provolone, mild cheddar, or even crumbled feta for a salty, tangy kick.
