First, remove the conservation water from the lentils , place them in a colander and rinse them under running water, let them rest long enough for them to dry (or dab them gently with kitchen paper).
Once dry, place them in the bowl you will use to serve your salad.
Wash the cherry tomatoes , pat them dry with a clean cloth and cut them in half and then into segments, then add them to the lentils together with the Taggiasca olives.
Clean the spring onion , remove the beard and all the earth if present, cut the green part (but don’t throw it away, it can be used to prepare the vegetable broth) and, finally, cut the remaining part (the white one) into rounds.
Finally, cut the feta into cubes and add it to the other ingredients, then season with extra virgin olive oil , salt and fresh basil .
