Pasta with Tomato Sauce and Philadelphia, easy and delicious. A first course, easy and quick, that can be prepared in less than half an hour.

The recipe is very simple. First of all, cook the tomato sauce for about 15 – 20 minutes, until smooth, then the pasta. Onion, Philadelphia cheese and parsley complete it. Add some freshly grated parmesan cheese to take it over the top!

Ingredients

320 g pasta (penne, mezze penne, farfalle or your favorite one)
200 g tomato puree
150 g soft table cheese (Philadelphia or similar such as stracchino, ricotta …)
3 tablespoons extra-virgin olive oil
1/2 onion (or shallot)
q.s. chili pepper
parmesan cheese (or Grana Padano or Pecorino)
q.s. parsley

Steps

1-

First, heat 3 tablespoons of extra-virgin olive oil in a pan, add the onion, finely chopped with a hand mixer (practical and very fast) and brown it for a few minutes.

Then, add the tomato puree, the chilli pepper, season with salt , cover with a lid and cook for about 15 – 20 minutes: you should obtain a thick sauce.

Meanwhile, put a pot with plenty of water on the heat and bring to the boil. When the water boils, add the pasta (I used kamut penne) and cook for at least  10 minutes (according to the instructions on the box); drain it al dente.

Whilst pasta is cooking, a few minutes before pouring it, add the philadelphia (or other spreadable cheese such as stracchino or ricotta) to the sauce and mix well. If necessary, add a ladle of pasta cooking water.

Then, also add a handful of chopped fresh parsley .

Drain the pasta with a skimmer directly into the pan, mix well and stir on the heat for a few minutes, until everything is well mixed and finally, add the grated parmesan and mix well.

You can store Pasta with Tomato Sauce and Philadelphia in the refrigerator for up to 2 days, closed in an airtight container even if I recommend eating it right away.

So the pasta doesn’t stick.  If you want the pasta not to stick and to be perfectly cooked, don’t pour it into the boiling water all at once, but a little at a time, so that the water continues to boil and the cooking is uniform. Remember, however, to stir regularly throughout the entire duration.
