Potatoes and sausages in ale. Cooking sausages in the oven with potatoes in one pan is a quick recipe you can throw together in mere minutes. The only things you need are your preferred sausages and beer. Simple and tasty! Everyone love it, adults and children!

Cooking sausages and potatoes in the oven is easy: just bake sausages at 230° C/450°F for 40 to 50 minutes with beer until browned. Add some rosemary and a clove of garlic and that’s it.

Prefer not to cook with beer? Use white wine or water instead.

Ingredients for Potatoes and sausages in ale

  • 1 poundsausages (+ 5 oz (600 g))
  • 2 poundspotatoes ((800 g) medium gold or yellow potatoes,)
  • 2 cupsbeer (+ 1/2 (660 ml))
  • 4 sprigsrosemary
  • 3 clovesgarlic
  • q.s.salt
  • q.s.pepper
  • q.s.extra-virgin olive oil

Preparation

  1. Potatoes and sausages in ale are very easy to make.

  2. First of all put the sausages into a large bowl. Pierce the sausage and cover with the beer.

  3. Marinate at least two hours.

  4. Meanwhile, peel the potatoes,

  5. cut into small pieces

  6. and place them in a large oiled roasting dish or rimmed baking sheet.

  7. Stir to fully coat the potatoes with oil. Season with salt and pepper, add rosemary and a clove of garlic.

  8. Use your hands to mix them all together to ensure your potatoes are fully coated.

  9. Preheat oven to 445° F (230°C).

  10. Place the sausages directly on top of the potatoes: pour some more beer (not more than 1 cm) and transfer the baking pan to the oven. Basting with beer adds flavor while keeping the sausages moist.

  11. Bake for 45 minutes.

  12. Remove from the oven, let it cool for a few minutes and then serve

Using a wood oven

  1. Heat your wood fired oven to max temperature (450°C)

  2. Let it cool. When at 230°C (445°F) place the baking pan with sausages and potatoes in the wood oven.

  3. Cook for around 45 minutes.

Recipe Notes:

1. Potatoes: Don’t dice your potatoes. If you cut them too small they’ll cook very fast and may burn. I recommend 1/2 inch thick and 1 to 1 /4 inches in diameter.

2. Sausages:I used Italian pork sausages in this recipe, but other fresh sausages, not pre-cooked, such as chicken or turkey, also work well.

3. Ale. Beer has wonderful tenderising properties, making it an excellent choice for a marinade. This recipe requires a long cooking and reduction, so it’s much better be cautious about using too strongly flavoured, or too bitter a brew, as it might end up overwhelming the dish.
