Bell Peppers Chicken

Bell Peppers Chicken is a yummy chicken dish with outstanding flavor, easy to make. It’s a true crowd pleaser dish where bone-in chicken thighs are cooked very slowly (a little more than an hour) with peppers. The result is a meat moist and tender.

It’s my mom’s recipe and my family’s favorite. We love it because it’s full of flavor and easy to make. If you don’t like chicken on bone, try just chicken breasts it works well too. I prefer cooking chicken with the bone because it keeps the meat moist, juicy and brings more flavor to the dish. But this is my opinion. Anyway it’s a really easy, tasty dish.

1 chicken (bone-in skin-on cut in 8 pieces or 6 bone-in skin-on chicken thighs)
1 bell pepper (red)
1 bell pepper (yellow)
1 white onion
1 sprig rosemary
5 sage (leaves)


1 Pan


Heat a large pan over medium-high heat with NO oil. Add the chicken. While warming, it will release a lot of fat: let it dry in the pan. Then set aside.

Meanwhile, clean bell peppers: remove the seeds and filaments and cut them into stripes not too large.

Put some olive oil in a large pan, when warm add the chicken and let it brown on both sides. Then add white wine and let it evaporate over medium heat.

Add sliced onion, a sprig of rosemary, five sage leaves and 1/2 glass of water. Let them cook for about 5 minutes.

Finally add bell peppers and continue cooking for about 1 hour over low-medium heat, covered with a lid.

Turn every now and again, till the peppers are cooked. Serve warm.

Storage: You can store bell peppers chicken in the refrigerator for 3 – 4 days in an airtight food storage container or you can freeze it for up to two months in meal prep containers for a ready-made-meal when you need it!
