Tasty and soft Meatballs with Tomato sauce, my mom’s recipe.

This is a classic Italian cuisine recipe. Obviously everyone has his own favorite go-to meatballs recipe. I think there’s no one best recipe, because everyone can have his own variant. You can change some ingredients, but Meatballs with Tomato sauce will always remain the favorite of adults and children. And then … there is nothing better then mopping the leftover sauce up with bread.

Ingredients

For the meatballs

17.5 ounces ground beef (500g)
1 egg
2 tablespoons parsley (minced)
3 tablespoons parmesan cheese (grated – 1,75 oz 50 g)
1 clove garlic (minced)
1 pinch salt
3 tablespoons breadcrumbs (or 4 – it depends on the dough consistency)

For the Tomato sauce

21/4 cups tomato sauce (500g)
1 onion
4 leaves basil
3 tablespoons olive oil
q.s. salt
11/2 cup water

How make meatballs

In a large bowl add the ground beef, the egg, the chopped parsley and garlic, the grated Parmesan, a pinch of salt and 3 tablespoons of breadcrumbs.

Combine with your hands until you get a soft but compact dough. If too wet, add another tablespoon of breadcrumbs.

Once ready, make the meatballs, rolling them with the palm of your hands. However, the size depends on your preferences. Mine are usually about 1” (2 – 2.5 cm).

How make the tomato sauce

Put the olive oil in a large deep skillet.

Chop the onion and brown it for about 1 minute on medium heat until it is golden brown, then add the tomato sauce and 3 – 4 basil leaves.

Add 1 glass of water and cook with the lid on for about 20 minutes. Then, add the meatballs together with 1/2 cup of water.

Bring to a boil and cook again, over low heat, for about 15 minutes, stirring occasionally, until the sauce has dried slightly.

Check the cooking of the meatballs. Once cooked, serve hot.
