Insalata russa – my family recipe from years. It’s not really an Italian origin recipe, but it’s nowadays a classic dish of the Italian tradition, usually prepared for Christmas or for festive occasions. This is one of my favorite dishes.

It can be prepared in many ways. I know there are many versions and every family in Italy has its own. This is my family’s recipe; we like it with potatoes, carrots, onion, peas, celery, tuna and mayonnaise. Basically, you can add to the salad whatever you want, according to your taste.

Ingredients for Insalata russa – my family recipe

  • 2potatoes
  • 2carrots
  • 2courgette (zucchini squash)
  • 1onion
  • 1 stemcelery
  • 1/2 cuppeas (frozen)
  • 1 cupmayonnaise (300 g)
  • 3.5 ouncestuna in oil (drained)
  • 2eggs (boiled)
  • q.s.salt

Preparation

  1. First, cook vegetables.

  2. Peel the potatoes and carrots, and boil them in salted water with courgettes, celery and onion, until they become just a little soft. Also boil the pees.

  3. Check on your vegetables early and often, as they have different cooking times. Do not let the vegetables overcook.

  4. After put the vegetables in a colander to drain and cool, then cut them into small cubes.

  5. Now add all the vegetables together in a large bowl with the drained tuna and taste them for seasoning with salt if needed. Stir in the mayonnaise, stirring gently.

  6. At this point, keep the Russian salad covered with plastic wrap or a lid in the refrigerator for at least half a day. It must be cold when serving.

  7. To serve, unmold Insalata russa onto a platter and decorate with slices of hardboiled eggs and chives.

Storage

Insalata Russa can be stored in a closed airtight container in the refrigerator for 2-3 days.
