Ingredients

10.50 ounces flour (300 g)
3.50 ounces unsalted butter ( 100 g)
4.20 oz sugar (120 g)
1 egg
1/2 lemon zest

For filling

2 cups mixed berry jam (250 g)
4 kiwis
10 raspberries
10 blueberries
q.s. jelly gelatine spray
q.s. powdered sugar

Steps

Christmas Tree Jam Pie is easy to make.
Let’s start with the shortcrust pastry.

Put all the ingredients into the bowl of the Planetary mixer, then start the machine at the low speed.

Mix everything until the dough starts to clump together.

Wrap with plastic wrap and refrigerate for at least 1 hour: this step is essential because resting allows time for the gluten in the dough to relax.

If you don’t want to use the dough right away, you can refrigerate it for up to 4 days, or freeze it for up to a month and then thaw overnight in the fridge.

Take dough out of the fridge and let it sit for a few minutes to soften slightly for easy rolling.

On a floured surface roll out the pastry to about 1/2 inch (1 cm) and put it in the fridge. Put leftover pastry in the fridge too. Preheat oven to 350°F (180°C)

If you see that it starts to crumble, work it with your hands before spreading it out.

Draw a Christmas tree on a drawing paper and cut it out. Place it on the pastry and cut out the edges with a sharp knife.

If the pastry is cold, you can cut it better.

Take leftover pastry, roll it out and cut out the tree’s contours. They must be about 1” (2 cm) wide.

Finish and cook

Gently place the edges on the tree-shaped base. Fill with the berry jam.

Bake in a preheated oven for about 25 – 30 minutes.

Remove from the oven and let it cool.

Meanwhile, using a star cookie cutter, cut out the exceeding pastry and transfer cookies to a baking tray. Bake them for about 5 – 7 minutes.

Finely dice the kiwi and arrange on the tart together with the raspberries and blueberries.

Sprinkle the jelly gelatin spray on the fruit to keep from blackening then dust with powdered sugar.
