Sunflower appetizer recipe

If you are looking for a great appetizer dish with a few simple ingredients, this Sunflower appetizer recipe is for you. It’s an easy recipe that requires no cooking (except for potatoes) and it’s perfect to serve on festive occasions (Christmas, Thanksgiving, New Year …) or at a party.

It’s made with mashed potatoes, mayonnaise and creamy tuna paté. The mash is then molded into a sunflower, hence the name. Thebest part is that you can even prepare it a few days in advance.

Ingredients

4 potatoes (small – medium size 350 g)
1 canned tuna (+ 1/2 in virgin olive oil – 10 oz – 260g)
3/4 cup mayonnaise (6,5 oz – 180 g)
10 black olives
2 sprigs chive (or rocket, thyme or the herbs you prefer)
1/2 lemon (zest )

Steps

First, in a large sauce pan cover unpeeled potatoes with cold water and boil them for about 20 – 30 minutes.

Simmer the potatoes until they are completely tender and easily pierced with a fork or a skewer.

When cooked, let them cool just enough that you can handle them. Peel and pass them through a potato ricer.

Put mashed potatoes in the food processor and let them cool for a while.

Then add drained tuna and the mayonnaise and mix until you get a smooth paté.

Add fresh chopped chive(or rocket, thyme …), the zest of 1/2 lemon and incorporate mixing with a spoon. Season with salt to taste.

At this point, transfer the tuna, mayo and potato mash to a serving dish and use a spatula to mold a circle.

Place potato chips around the paté to resemble sunflower petals.

Finally cover with black olives (or green if you prefer).

Tips and Tricks

I recommend using tuna in olive oil but the one in sunflower oil is good as well.
