Easy Roasted Carrots. This simple recipe is the most versatile side dish. It pairs perfectly with rich festive dishes like stuffed turkey roll, baked chicken thighs, crispy fried chicken breast
Baked carrots are easy to make and only take a few minutes to prepare! Fresh carrots are seasoned with olive oil, salt and pepper and roasted until tender and golden brown for a family favorite side dish !
For a sweeter glazed carrot, add 1 tablespoon honey or brown sugar before cooking.

Ingredients Easy Roasted Carrots

7 carrots
3 tablespoons olive oil
salt
pepper (ground)
parsley (fresh for garnish)
thyme (ground)
basil (ground)

Steps Easy Roasted Carrots

Preheat oven to 400º F ( 200° C )
Wash and remove skin from carrots with a potato peeler.
I prefer to peel my carrots before roasting but it’s not mandatory. Peeling your carrots gives them a cleaner look. If you choose not to peel them, scrub them with a vegetable brush to make sure you remove any dirt or debris before roasting.
Cut the carrots into fairly fine rounds.

On a large baking sheet, season the carrots with olive oil, salt and pepper and various spices, spread in an even layer on a large tray. (Feel free to add your favorite herbs or spices, too!) Make sure you don’t overcrowd the tray.
Cook the carrots in the oven for 15 minutes.

To test if the carrots are tender, stick a fork into the fattest part of a cooked carrot. If it goes through easily, your carrots are ready. If you have any left over, you can store them in an airtight container for up to 4 days in the refrigerator.

Add them as a side dish for any festive dinner served alongside your favorite stuffing , mashed sweet potatoes or serve them with any main dish!
