Ingredients How to Make the Perfect Roast Beef in the Oven

17 ounces beef (500 g )
2 sprigs rosemary
salt
pepper
1 leaf laurel
1/2 cup olive oil (100 g)

1 Thermometer
Aluminum
1 Baking Tin

Steps How to Make the Perfect Roast Beef in the Oven

To prepare the meat, start by tying it or buy it already tied at the butcher.

Season the entire surface of the meat with plenty of salt and pepper.

Place the herbs under the string. ( rosemary and laurel )

Pour the oil into the cast-iron pan and heat.

Add the meat and brown it on all sides over a high flame, about 25 minutes, keeping it turned.

When the meat has taken on a golden colour, remove it from the pan and place it on a baking tray.

Bake in a preheated oven at 220°-230°C, check the temperature with a thermometer.

At 40° the meat will be rare, 48°-55° pink, 58° onwards well done.

Now wrap the meat in aluminium foil. Leave to rest 30 minutes in a warm place you can use the oven with the door open.

( What does it mean to let a roast rest? It means that the juices inside the roast will have the opportunity to redistribute themselves within the roast. )

Slice the roast-beef thinly and serve.
