Dry the chicken. Season everything with 1 teaspoon salt.
Heat the oil in a large frying pan over medium-high heat. Once the oil is shimmering, add the chicken and cook about 5 minutes per side, or until golden brown. Transfer the chicken to a plate.

Add garlic to the same skillet and cook until fragrant, about 30 seconds, then remove.
Stir in the heavy cream, chicken broth, ¼ cup Parmesan cheese, sun-dried tomatoes, Italian seasoning, pepper, and remaining salt until combined.
Return the chicken to the pan. Bring the sauce to the boil, then reduce the heat to medium-low. Cook until the internal temperature of the chicken reaches 165°F on an instant-read thermometer, about 5 minutes longer.

Garnish the chicken with basil, and serve hot, over pasta or mashed potatoes, if desired.
Refrigerate in an airtight container up to 4 days.
