Start by preheating the oven to 400 degrees F. (200 degrees C ) At the halfway mark you will lower the oven temperature.

Place the pork loin with the fat facing up in a glass baking dish suitable for baking lined with parchment paper.
Then, prick with the tips of a fork, rub olive oil over the meat and combine powdered seasonings on all sides of the pork.

Peel the onion and cut it into strips add it to the meat, and also add the chicken stock.
Bake the pork loin for 1 hour in the oven at 400 degrees F Covered with aluminum foil.
Then, lower the oven temperature to 350 degrees F and continue to cook your roast for about 2 hours.
Yes, it does take a little time. But trust me, it’s worth it!

Once the pork loin has reached an internal temperature of 145 degrees F, take it out of the oven. Then cover the roasted pork loin with a piece of foil and let it rest until cold.
Transfer the roast to a cutting board for slicing.
In a saucepan transfer remaining juices to pan add chicken broth and cornstarch. cook until creamy.
Serve with warm pork loin.
