It is delicious on its own, but is perfect served with tea, coffee, cappuccino or a glass of milk.

3 cups flour (all purpose 350 g)
1/2 cup icing sugar (80 g )
1/2 cup unsalted butter (120 g)
4 egg white
1 pinch salt
10 ounces jam

Sift the all-purpose flour into a bowl.
Add the powdered sugar and salt
Start the machine and add one egg yolk at a time
Combine the soft butter
Pour in the shortcrust pastry and form into a ball
Let rest in refrigerator for 30 minutes covered with plastic wrap.

Roll out with a rolling pin into a 0.16-inch loaf pan
Use an 8.5-inch cake pan
Trim the edges flush
Prick the base with a fork
Spread the jam
Roll out another piece of pastry to form the grid , or form interlocking strips.

Trim the cake and bake at 356° F for 25 minutes.
Allow to cool completely
Sprinkle powdered sugar over the surface

You can use your favorite jam to make the tart! I like to use strawberry jam but you can choose with apricot jam, cherry jam, or homemade peach jam.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
You can also freeze the tart. Be sure to store it in a container suitable for freezing and thaw it completely before eating it.
