Cookies with apricot jam

Cookies with apricot jam. Stuffed cookies are a shortbread dessert perfect for breakfast. I had great success making these simple cookies.
So today I’m sharing with you another classic favorite: these simple jam filled cookies. The cookie dough for this recipe is made with just a few ingredients and they are ready in minutes.

Ingredients Cookies with apricot jam

4 cups flour (450 g)
1 cup unsalted butter (250 g)
1/2 cup icing sugar (120 g)
1/2 teaspoon cinnamon powder
3 eggs
1/2 cup apricot jam (150 g)
1 pinch salt

Steps Cookies with apricot jam

First of all start preparing the shortcrust pastry, you can also prepare it the night before, the important thing is to cover it with plastic wrap and leave it in the refrigerator.
Pour the soft butter in the bowl, add the sugar the cinnamon powder and salt, work little with your hands add the eggs , always work quickly.
Finally add the flour, remove from the bowl and bring the cake base on the work surface to form a ball.

Cookies with apricot jam

Roll out the shortcrust pastry with the help of a rolling pin.
Carve cookies with an 8 – 10 cm ( 3 – 4 inch ) round mold
Place a teaspoon of jam on half of the shortbread disks.
Cover with other disc halves, press down edges to seal .

Cookies with apricot jam

Place in oven at 350° F (180° C). For 30 minutes.
Allow to cool completely before sprinkling with powdered sugar and serving!
