Easy and tasty, this baked pasta is prepared in no time and is really very good. Excellent for a Sunday lunch or a family dinner, as an alternative to the classic baked lasagna, it is perfect to prepare in advance. It’s my family’s tried and tested recipe.

Ingredients

13 oz pasta (350 g – short pasta: tortiglioni, penne …)
1 egg (hard-boiled)
1 cup mozzarella
2 oz parmesan cheese
1 egg
salt

For the sauce

21/4 tomato sauce (500 g – oz 18)
1/2 onion

Steps

1- Make the Sauce

First, boil the egg in boiling water for about 8 minutes from the start of the boil and let it cool under cold running water, then prepare the sauce.

In a fairly large frying pan, heat 2 tablespoons of extravirgin olive oil, add half an onion, finely chopped and brown briefly.

Add the tomato puree, season with salt and cook over a moderate heat for about 15 – 20 minutes, making sure it does not dry out too much (remove 2 ladles of sauce from the pan, you will need them after).

Meanwhile, cook the pasta (tortiglioni, penne or other short pasta shapes) in plenty of salted water.

Tip: drain the pasta 2 minutes earlier than indicated on the package to prevent it from being overcooked after placing it in the oven.

Once cooked, pour it into the pan with the sauce and stir to flavor the pasta well.

In a baking dish, pour a couple of spunfuls of tomato sauce on the bottom then spread a layer of pasta (about half), again sauce, the boiled egg cut into slices, half the grated Parmesan and the mozzarella (drained) into slices .

Cover with the remaining pasta and plenty of grated Parmesan. Just before placing in the oven, beat the egg and pour it over the pasta.

Place in the oven and cook in a ventilated oven at 350°F (180°C) for about 30 – 35 minutes.
