First, put on a large pot of water to boil. Once it starts to boil, add salt and cook the pasta al dente according to the instructions on the package.
While the pasta is cooking, prepare the sauce.
2- Make the sauce
Place butter in a small saucepan and cook over low heat until melted. In another saucepan heat the milk. If you prefer heat it in the microwave, you will do faster.
Gradually pour flour and whisk continuously. Then add warm milk and whisk, avoiding the formation of lumps. Put it back on the stove and bring to a boil. Season with salt and pepper and mix well. If you want, you can also add nutmeg.
Continue to whisk. When creamy, the sauce is ready.
In the meantime, remove the skin from the sausage, crumble it with your hands and add it to the bechamel sauce (1), together with half of the grated Parmesan (2).
Continue cooking for 5 or 6 minutes, stirring occasionally.
3- Finish and serve
A few minutes before the pasta is completely cooked, add the heavy cream to the pan and mix.
Once the pasta is cooked, drain it (set aside 2 ladles of cooking water) and put it back, still hot, in the pan with the sausage. Add 1 ladle of cooking water and let it go over the heat for a few minutes, stirring rapidly.
Sprinkle with the remaining grated Parmesan, some thyme and serve.
