Simple recipe, but very tasty. I sautéed bacon in a pan with a little butter and extra-virgin olive oil together with the onion, then I added the tomato sauce and spiced with chilli, just enough to make the pasta a little bit spicy. I finished with grated pecorino and smoked scamorza cheese cut into strips and then baked in the oven. Delicious!!! Follow my step-by-step photos below, it’s easier done than said.

Pasta with Bacon Tomato Sauce and Cheese recipe is easy to make.
First peel the onion, cut it in half and then into thin slices. Pour 2 tablespoons of extra virgin olive oil into a fairly large pan, let it heat up, add the butter and then the sliced onion and the chilli. Brown it together with the bacon over low heat for about 10 – 12 minutes.
Now add the tomato sauce (or peeled tomatoes) and cook over low heat for about 20 minutes, season with salt towards the end of cooking.
Cooking
Meanwhile, boil the pasta in plenty of boiling salted water and drain when al dente.
Trick: drain the pasta at least 2 minutes earlier than indicated on the package to prevent it from being overcooked after gratinating in the oven.
Once cooked, pour them into the pan with the sauce (1), add 2 tablespoons of grated pecorino (2), the scamorza cheese cut into strips (3) and mix well.
In the oven
Then grease an ovenproof dish with the remaining oil and pour in the pasta seasoned with the sauce and cheese. Sprinkle it with the remaining grated pecorino and bake in a preheated oven at 390° F (200° C) with the grill function, until it is well au gratin.
Finally the pasta is ready.
