Bacon and Ricotta Pasta recipe is very easy to make.
First, put on a large pot of water to boil. Once it starts to boil, add salt and cook the pasta al dente according to the instructions on the package.
While the pasta is cooking, prepare the sauce.
Make the sauce
Heat the olive oil (1 or 2 tbsp) in a large pan (1) and sauté gently the bacon until fat becomes transparent (2).
In a separate bowl, with a wooden spoon gently mix the ricotta with the grated Parmesan (or Grana Padano) and a ladle of cooking water; set aside.
Finish and serve
Once the pasta is cooked, drain it (set aside 2 ladles of cooking water) and put it back, still hot, in the pan with the bacon. Add 1 ladle of cooking water and let it go over the heat for a few minutes.
Now add ricotta and cheese sauce to the pasta, mix well. If needed, add more cooking water, a little at a time. Season with salt and pepper. Serve hot.
