Apple cake

This delicious Apple cake comes directly from my mother-in-law recipe book and it’s a classic Italian style breakfast cake, effortless to make and tastes incredible. Ingredients for the Apple cake

1/2 cup unsalted butter (melted – 3,50 oz 100 g)
3 eggs
1 cup granulated sugar (6,70 oz – 190 g)
2 cups all purpose (AP) flour (8,80 oz – 250 g)
1/3 cornstarch (1,76 oz – 50 g or all flour)
2 apples (small, peeled, cored, and chopped into 1/2-inch pieces )
2 apples (small, peeled cored and finely sliced to put on top of the cake)
21/4 teaspoons baking powder (0,46 oz – 13 g)
1/4 teaspoon salt
unsalted butter (for the baking pan)
flour (for the baking pan)
powdered sugar

Steps

The Apple cake is easy to make.

First put the butter in a bowl and melt in the microwave for 30 seconds at maximum speed, set aside.

Meanwhile in the stand mixer beat the eggs together with the sugar (1), until the mixture is light and fluffy (2).

You can also use the electric whisk and put the ingredients in a bowl.

Sift the flour, starch (if you don’t have it use all flour) and yeast and add them gently to the mixture, along with the melted butter and salt.

Preheat the oven at 365°F (185° C)

Peel the apples. Put 2 small cubed apples in the mixture and gently mix with a spatula. Thinly slice the other two: you will need them on top of the cake.

Butter and flour a 10-inch (26 cm) cake pan (3), pour the dough into it and add the apples (4).

Bake in a preheated oven for about 40 minutes, until just beginning to turn golden.

Cooking times vary from oven to oven. To check if it is done, insert a toothpick in the center of the cake. If it comes out clean, it’s cooked. If it’s sticky and moist, the cake isn’t ready yet.

Do not overcook the cake, otherwise it will be dry.

Allow the apple cake cool completely. Once at room temperature, sprinkle with powdered sugar if you want.

Storage

You can store the Apple Cake in an airtight container for up to 3-4 days, but it’s unlikely to last that long.

Tips & Tricks

You can use vegetable oil instead of butter.

You can add to the batter a teaspoon of cinnamon for a more flavorful and spicy taste.
